Did you put a penny in it? Just kidding!
That's my favorite with collard greens and corn bread - the perfect bite on New Years Day!

I'm making mine for dinner! So where do you get collard greens out there? Von's, Trader Joe's, Whole Foods, Henry's, the Little Italy Farmers Market... they all stared at me like I was speaking Klingon. And were judging me just as hard.

I have never put collard greens in mine. My grandmother did. Onion, green bell pepper and garlic, sautéed until tender, a can of diced tomatoes, a pound of bacon cooked. Bake at 350 for 45 minutes. Serve over cornbread and yummmmm. I think I will see if I can find some collard greens to add to the recipe next year. I'll bet Jimbos will have it.

I do my collard greens in a separate pot with chicken broth, garlic and the leftover ham and hambone from Christmas.

Is this a southern thing? Please help a yankee understand. The black eyes peas and ham or bacon is supposed to guarantee a good year.

N.C. isn't what it used to be! Back in my H.S. days I worked in my neighbors cafe. Black eyed peas, collard greens, hog jowls, grits, red eyed gravy, fried steak, hush puppies, biscuits, brains and eggs for breakfast where all the normal. Same regular crowd too, postman, highway patrol, police, sheriff, farmers, and the undertaker. Like a scene from Mayberry!

The rest, not so much. But, man, it's hard to find corned beef hash in restaurants in my part of the country. Fried okra, too. Surprisingly, the gas station on the way into the Raleigh-Durham airport has been known to have good, fresh, fried okra... yup, behind the counter next to the scratch-off lottery tickets. Catfish too, but I haven't tried it yet.

I miss grits. With butter and hot sauce - oh yum! Carolina style pulled pork is awesome too. Chicken fried steak and mac and cheese. I'm drooling. I am sorry DC, but I hate okra - nasty, slimy stuff!
