I had a dog many yrs. ago that hunted fish. She looked about the same size as your dog. My animal would wade out into the shallows about chest deep and wait for minnows or small fish to swim close to her. When the fish were close enough she would then lower her head under water and attempt to bit one. She wasn't successful very often but sometimes she got lucky.

In this pic worksforme2 "Gyro" the dog was waiting patiently whilst Ms enna (off camera to the left) was feeding some wheat to the ducks. He would wait until the ducks were settled in a decent number, then charge at them at which point they'd scatter. Ms enna would then admonish him, he'd trot back to me, Ms enna would resume feeding, a decent number of ducks would re-assemble, and he'd charge into them again. All completely brainless, but quite entertaining.
